Recipe of the Month

Avocado Mayonnaise

Neither mayonnaise or guacamole, but something in between.

This condiment is great with hot or cold chicken, cold shell fish, use it as a sandwich spread, a dip or add sour cream and use it as a dressing.

Ingredients
-1 or 2 Ripe Avocados, peeled & pitted
-1 Clove Garlic peeled
-2 Scallions chopped
-1 Tablespoon Corn Oil
-1/4 Cup fresh Cilantro
-1 Ripe Lime
-Salt & Pepper

Instructions
- Combine all ingredients except for the salt, pepper and lime in a blender or food processor.
- Blend until smooth.
- Scrape into a bowl, add the juice from the lime and mix.
- Add the salt & pepper to taste.
- Serve or store in the refrigerator for a couple of days.

FYI - Did you know that about 50 million pounds of Avocados are consumed on Super Bowl Sundays. That's enough to cover a football field at a depth of 12 feet.

Music at St. Paul’s

Upcoming organ concert! On Sunday, Feb. 24th at 3 pm, St. Paul’s will host an organ recital. There will be a number of performers from the Middlesex branch of the American Guild of Organists (AGO), including Emily Sensenbach-Gopal and John Eisenhauer, who has substituted here. The theme of the concert is America.

The program, though subject to change, now includes:
Works by American composers
Works composed by their performers
An improvisation on a theme suggested by the audience
Selection of American hymns (with audience participation!)

Admission is free and a reception will follow.

Please consider inviting a friend or several. Concerts are a non-threatening way to introduce our neighbors to St. Paul’s! A poster is included in this edition of the Tidings; please hang it in your workplace or neighborhood. Volunteers are needed to host the reception and act as ushers; talk to Emily if you are available.

Other musical announcements:

Women’s Choir will sing on the first Sunday of February.

 Any women (of any age) interested in singing a simple anthem should meet at 9 am in the choir room on Sun., Feb. 3rd.

Organ crawl. As a prelude to the Feb. 24th organ concert,

there will be no Children’s Choir on Sun., Feb. 17th. Instead, at 11:30, Emily will give a tour of the organ geared toward children but interesting for adults too. If you’ve ever wanted to play the organ, know how it works, or take a peek inside, this is your chance!

Easter cantata rehearsals begin Thurs., Feb. 7th at 7:30 pm

in the choir room. The adult choir could use some extra voices!
