Recipe of the Month

Simple Aioli Sauce
Ingredients:
1 clove garlic chopped
2 tbsp. lemon juice
1 tsp. salt
1 pinch pepper (white if possible)
2 extra large eggs YOLKS ONLY
1 cup olive oil
¼ cup chopped scallions
½ cup chopped basil
2 tbsp. capers

Instructions:
In a food processor or blender – with motor running ADD garlic, lemon juice, salt, pepper and egg yolks. In a SLOW, thin stream, ADD the olive oil until the mixture is emulsified. (It will have a texture like mayo). Transfer the mixture to a bowl and fold in the scallions, basil and capers.

Use in place of mayo, in salads, on sandwiches, etc. Great with any fried fish. If anyone has a question, please call or email me at
