Broccoli & Cheese Soup ala Gianna

Serves 2

INGREDIENTS
1 Cup of Frozen Broccoli Florets
2-10 oz Cans of Chicken Broth
4 oz Velveeta Cheese
Shredded Cheddar Cheese
Finely chopped garlic (2 cloves)
2 tea spoon olive oil
1 tea spoon butter
Black Pepper or Cayenne Pepper to taste

INSTRUCTIONS
In a medium size sauce pan on low heat combine oil, butter and garlic.

Saute garlic for 1 minute( Do Not let the Garlic Brown ). Then add frozen

Broccoli & Chicken Broth, Simmer until Broccoli is tender. Add Velveeta and pepper, stir until smooth and creamy. Serve immediately and top with Cheddar Cheese.

*If soup is too thick add more broth or a little water. If you like it thicker add more Velveeta.

 Poultry - 165 F
Ground Meats - 155 F
Roasts & Steaks - 145 F
Fish -145 F
Eggs -145 F

ALSO IMPORTANT

Food to be held and served later must be cooled from 140 to 70 degrees within two hours then from 70 to 41 degrees within an additional four hours. 

The MAXIMUM temperature in your refrigerator should be 38 degrees or lower at all times.
